Pudding flan for mum / Flan de huevo para mamá



When I was little I craved for pudding flan. Every time I was going to the supermarket with my mum I’d go to the desserts shelves and ask her to buy me vanilla pudding flan. She didn’t like me to eat this sort of junk supermarket food, and only occasionally she would buy some. As I liked pudding flan so much, she bought a set of tins to bake them home made. Poor mum! The tins she bought were not corrugated, so the flans didn’t turn out with the undulations the supermarket ones had. I liked to eat my flan scooping one by one each of the undulations they had! The ones mum baked didn’t have them, so I didn’t like them. How picky little kids can be! If she had bought corrugated tins, I would have scooped mum’s flans into my mouth. Several years ago she gave me the tins she bought and now I bake delicious flans with them. This first post is dedicated to mum, who inculcated us the importance of an equilibrated diet and amorous cooking.

Cuando era pequeña me encantaban los flanes de vainilla. Cada vez que iba al supermercado con mamá me dirigía a las estanterías de los postres y le pedía que me comprase flan. A ella no le gustaba que comiese este tipo de porquerías, y sólo los compraba ocasionalmente. Como me gustaba tanto el flan mamá compró unos moldes para hacerlos caseros. ¡Pobrecita! Los moldes eran lisos y los flanes no salían con las ondulaciones de los del supermercado. Me gustaba comerme el flan pasando la cucharilla ondulación por ondulación. ¡Qué caprichosos son los niños! Si mamá hubiese comprado moldes ondulados me habría comido sus deliciosos flanes. Hace unos cuantos años me dio los moldes, y ahora hago deliciosos flanes. Este primer post va dedicado a mamá, quien nos inculcó la importancia de una dieta equilibrada y a cocinar con mimo.

BASIC INGREDIENTS / INGREDIENTES BÁSICOS
1 tin (395g) condensed milk / 1 bote (395g) leche condensada
½ litre milk / ½ litro leche
4 eggs (beaten) / 4 huevos batidos
1 lemon or orange peal/ 1 corteza de limón o naranja
1 cinammon stick / 1 palo de canela

CARAMEL INGREDIENTS / INGREDIENTES CARAMELO
6 tbs sugar / 6 cucharadas soperas azúcar
Few props of lemon juice / unas gotas de zumo de limón
2 tbs water / 2 cucharadas soperas agua
1/10 litre water (glass) / 1/10 litro de agua (un vaso)

1) Heat the sugar and drops of lemon in a pan. Add the spoons of water and mix well with a metallic spoon until the mixtures has a nice brown colour.
2) Remove the pan from stove and carefully add the remaining water mixing well. Boil for an extra 5 minutes until the caramel is dense enough.
3) Pour the caramel into the pudding tins and let cool down
4) Mix the condensed milk, the milk, the cinnamon stick and lemon peal in a pan. Heat the mixture mixing every now and them for around 30-40 min. The mixture should NOT get to boiling point. Remove the cinammon stick and lemon peal and set aside. You can add a bit of rum, whisky or alike to give an small alcoholic flair.
5) Beat the eggs in a big bowl and add the hot milk mixing thoroughly.
6) Pour the mixture in the pudding tins and cook in Mary bath (180ºC for 30-40 min). The level of water should reach ¾ of the height of the pudding tin, and put some eggs shell into the water to avoid boiling splashes.
7) Let cool down and then store in the fridge.
8) To turn the pudding out of the tin heat the tin in boiling water for few minutes, which will liquefied the caramel. Then with the help of a knife turn the pudding out of the tin.

1) Calentar el azúcar en un cazo con las gotas del limón y las 2 cucharadas de agua.
2) Retirar del fuego y añadir con cuidado el vaso de agua removiendo bien. Cocer unos 5 min hasta que el caramelo espese.
3) Verter el caramelo en los moldes y dejar enfriar
4) Poner en un cazo la leche condensada con la leche, la canela y la corteza de limón, y calentar durante 30-40 min removiendo ocasionalmente sin que llegue a hervir. Apartar del fuego y retirar la corteza de limón y el palo de canela. Añadir un poco de ron, whisky o similar si se desea dar un ligero sabor alcohólico.
5) Batir los huevos en un recipiente y añadir la leche caliente poco a poco sin dejar de remover.
6) Verter la mezcla en los moldes caramelizados y cocer en el horno al baño María (180ºC for 30-40 min). El agua debería cubrir ¾ de la altura del los moldes. Poner cáscaras de huevo en el agua para evitar las salpicaduras del agua hirviendo.
7) Dejar enfriar a temperatura ambiente y después guardar en el refrigerador
8) Para desmoldar el flan calendar el molde en agua hirviendo para que el caramelo se vuelva líquido. Entonces con la ayuda de un cuchillo desmoldar el flan.
